不少茶友大概都知道中國的紫砂茶壼能改善茶湯的味道。其實不少日本茶壼都有不同改善茶湯味道的效果!這不是甚麼「特殊科技」或「神怪」,歸根究柢,都是與製作茶壼的土壤有關。
我們搜羅了來自日本不同地方的茶壼,並試用它們來泡茶,發現不同的茶壼對茶湯有着不同的影响︰有些茶壼會減低茶湯中苦澀的味道,令茶湯入口更柔順;有些茶壼特別適合泡濃茶,令茶湯更甘甜;又有些茶壼有如音響的「擴音器」,令茶味豐富起來!
這些都與茶壼的出產地、茶壼匠人的手工、土壤、燒製的方式有關。所以每個茶壼都有它們獨特的個性、美態與功用。

It is hard to imagine that some tea pot could change the taste of tea.
However if you compare, the difference is very clear.
Some tea pot could change to less bitter, more mild. Some tea pot could change more strong flavor, more sweet.
Depending on place of production, master of tea pot, soil, how to burn etc,,,the character of tea pots is all different.
這是其中一個我最喜愛用來泡茶的常滑燒茶壼,日本人喚這款扁平形狀的茶壼喚作「寶瓶」﹙Hobin﹚。
它已經有四五十年歷史﹙比我的年紀還要大!﹚,由著名陶芸家初代小西友仙所造。
日本人專以「寶瓶」來泡玉露,因為形狀最合適。不過,當我們試用它來泡中國茶,如烏龍茶、紅茶,甚至生 / 熟普洱茶,它都能泡出各款茶的獨特風味,沖泡出來!
This is one of my favorite tea pot which is produced about 40-50 years ago in Tokoname,
made by famous tea pot artist the First Yuzen.
This shape of tea pot is called "Shiboridashi" or Hobin in Japanese.
This tea pot is originally made for Gyokuro.
However this tea pot is even suitable for Chinese Tea, like Oolong tea, Black Tea, Pu-er Tea etc,,,
Green Tea/緑茶
Oolong Tea/烏龍茶
Black Tea/紅茶
這個寶瓶,最大的特色是令茶湯的口感變細滑,
當你喝一口經由它傾注出來的茶,你的口腔至喉嚨都能感受到茶的味道;
茶湯的苦澀減少,味道柔順了,於是茶的甘甜彰顯出來。
這個寶瓶特別適合泡日本綠茶、紅茶,以及普洱茶。都是濃厚的茶。
質素普通的茶,經好的茶壼能沖泡出較佳的味道。上佳的茶,當然更需要上佳的茶壼,泡出好茶真滋味。

陶藝家︰伊藤雅風
這次常滑之旅,老闆拜訪了數位常滑燒陶匠,還不到三十歲的 伊藤雅風先生是最年輕的一位。年青的伊藤樣製陶練歷卻不短,他的作品在同輩中表現突出,近年更暢銷至日本以外的地區。
除了本身的造藝與風格,伊藤雅風陶作的獨到之處,他堅持使用自家製作的土壤來創作﹙是的,泥士需要經過一番工夫,才可以用來做陶具啊!﹚——由土石製成「陶土」的過程,當中牽涉多個程序,所需時間約要三年﹙!﹚。縱然製作時間是這樣的漫長,他仍秉承這種傳統的製陶方式——他的師承常滑燒國寶級大師三代常山的徒生,他說這種製陶方式正來自常山。他更非常樂意跟老闆分享他自製陶土的製作過程。
伊藤先生本身也喜歡喝茶,日本茶、中國茶,他也喜歡喝。我們用他的藝碗來泡茶,發現造碗的功夫果然非常細緻,以致泡茶時的保溫及存氣都相常出色。大概出自愛茶人雙手的茶具,會更配合泡茶的需要吧!
老闆用由伊藤雅風所作蓋碗來泡原本淡淡的白茶,竟然能泡出白茶那種獨特的幽幽香氣,餘韻無窮!用來泡生普洱,口感也更清澈,茶的花香、點點的辛香,也格外分明。
Tea pot artist, Ito Gafu
Ito Gafu is a young tea pot artist who is called "Kyusu Baka" which means crazy on tea pot.
He is a artist who focus on his own soil.
Tokoname is famous for "Red Soil" . Original real "Red Soil" improve tea taste very well.
However it is very rare to find the real "Red Soil" as many of houses or factories built their.
Also it takes very long time and works for treating the soil.
Therefore, usually synthetic red soil is used now.
Ito Gafu look for real soil by himself and he treat the soil in the method come down from The third Jyosan, who is the human national treasure of Japan.
It takes about 3years to treat the soil in the method.
His tea pot which is made with his own soil could improve tea taste very nice.
If you drink Rock Tea with his pot, you can feel the tea taste with whole mouth and throat.
If you drink raw Pu-er with his pot, taste become very soft but much sweeter.
He is a tea lover who is very rare in tea pot artist.
So he makes tea pots as understanding tea lovers.
It is very comfortable to use his tea pots.
1, Real "Red Soil" is not red color, it is yellow color!.
2,3, Everyday he mix soil and water then filter out little by little to take silky soil.
4, He move out filtered soil to ceramic container to remove too much of moisture.
5, He moved again to small container to make the soil "sleep".
